It’s the perfect summer side dish… Red Cabbage Salad! I love, love, love it alongside a hummus platter or going old school and stuffing it into a pita sandwich. I can thank Garbanzo Mediterranean Grill for my little obsession.
Just like my yummy summer broccoli slaw, it’s a quick mix of a few ingredients in a large bowl. If I were to guess, it’s probably the easiest thing you can make aside from slicing a loaf of bread.
May I also suggest… this red cabbage salad is also a pretty fabulous hot dog topping? It’s colorful, vibrant and makes such a pretty addition to any plate. Go on, make this side dish for your next BBQ!
- 10 ounces shredded red cabbage
- 1/2 red onion, diced
- 2 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- Mix all of the ingredients in a large bowl, tossing well to coat the cabbage. Serve immediately.
